Made by Rougie of Sarlat, one of the biggest names in foie gras production, this block of rustic and delicious duck liver is made by marinating pieces of duck foie in sweet port wine. The block is fully cooked, and can be eaten right off that can (which we have!). Store in the fridge for about 1 hour prior to serving, for a nice chilled taste. Cut the block without spreading for best texture.
